1 Cup

Chopped Kale

4 to 6 Cups

Medium Apples, cored and diced

1 1/2 Cups

White or Red Wine Vinegar

1/3 Cup

Minced Shallots

1/4 Cup

Dijon Mustard

1 Tbsp

Extra Virgin Olive Oil

1/2 Cup


STEP 1: Prepare

Prepare the farro according to the package directions. Drain and cool.

STEP 2: Cut

Cup up the kale, apples, and cheese.

STEP 3: Combine

To make the vinaigrette, combine the vinegar, shallots, and mustard. Slowly whisk in the olive oil until smooth.

STEP 4: Toss

Combine all salad ingredients in large bowl. Drizzle vinaigrette over salad. Toss and enjoy
