Cilantro-Ksar Pesto
A twist on the old classic using cilantro and Sahale’s Ksar instead of basil and pinenuts… This new and refreshing version can be served tossed with pasta or risotto, as a sauce for fresh fish, in a broth with mussels & clams, as a sandwich spread for grilled chicken or vegetables and a drizzler for quick fajitas. With this much versatility, Cilantro-Ksar Pesto could easily become a new household favorite!
2/3 cup cilantro leaves, washed
1/3 cup parsley leaves, washed
˝ cup grated parmesan
2 tablespoons water
1/3-1/2 cup extra virgin olive oil
1 small garlic clove, smashed
2 ounces Sahale Snacks Ksar Blend
Salt & pepper to taste
Using a blender or food processor, blend the cheese cilantro and parsley together with the 2 tablespoons water. If you are using a blender, you may need to pulse a few times, scraping the edges to get the mixture started. Add the olive oil and garlic until there is a smooth puree. Add the Ksar and pulse to combine. Allow each ingredient to blend smoothly with the preceding one. Season to taste with salt and freshly ground black pepper.
Store prepared sauce in the refrigerator or freeze.
