Curried Couscous

with Sahale Snacks® Thai Cashews Glazed Mix

Since we’re all creatures of habit, we fall into routines.  We eat healthy, we eat poorly, we exercise regularly or we choose to sit on the couch.  Regardless of what your current routine is, you can break free from mundane food choices with this amazing Curried Couscous and Cashew Recipe.

It’s a Mediterranean-inspired prepared side on its own, or it pairs exceptionally well with grilled chicken, sautéed root vegetables, or even fried tofu to create a substantial and fulfilling main course.  The cashews add a wonderful contrast in texture to the chewy raisins, cooked chick peas and soft couscous, so you’re left with a satisfying crunch in every bite.

Ingredients

Couscous

1 1/2 cups

Chicken stock

3 cups

Curry powder

1 Tbsp

Salt

2 Tsp

Ground black pepper

1 Tsp

Extra-virgin olive oil

2 Tbsp

Raisins

1/2 Cup

Drained chick peas

1/2 Cup

Chopped cilantro

1/2 Bunch

Chopped green onions

1/2 Bunch

Thai Cashews Glazed Mix

1/2 Cup

Step 1:  Pour

Pour couscous into a bowl.

Step 2:  Mix

Mix chicken stock, curry powder, salt, pepper, olive oil and chick peas in a saucepan.  Bring to a boil.  immediately remove from heat.

Step 3:  Pour

Pour boiling liquid over the couscous.

Step 4:  Seal

Seal the bowl with plastic wrap and allow it to sit for 10 minutes.

Step 5:  Fluff

Fluff couscous with a fork.

Step 6:  Add

Add raisins, cilantro, and green onions.  Mix gently.

Step 7:  Top
